| Simple Recipe For Chinese Chicken Soup |
Ingredients:
· 1 Entire chicken (about 3-4 pounds), cleaned and cut into pieces
· 8 cups of water
· 2 slices of ginger
· 2 cloves of garlic, crushed
· 2-3 green onions, chopped
· 1 teaspoon salt, or to taste
· 1/2 teaspoon white pepper
· 1 tablespoon soy sauce (optional)
· 1 tablespoon sesame oil (optional)
Instructions:
1. Start by washing the chicken pieces under cold water and removing any extra fat. This
will help to reduce the fat content in the soup.
2. In a big jar, add the chicken pieces, ginger slices, and
crushed garlic.
3. Pour in 8 cups of water and carry it to a boil over high
heat.
4. Once it's steaming, reduce the heat to low and let it simmer for about 45 minutes to
1 hour.
5. Scan off any foam or impurities that rise to the surface.
6. Add the cut green onions to the pot and continue to cook for another 15-20 minutes or until the
chicken is fully cooked, and the broth is flavorful.
7. Remove the chicken from the pot and let it calm.
8. Once cool, shred the chicken into bite-sized pieces with your hands or a fork. Discard the bones.
9. Spice the chicken broth with salt and white pepper to taste. You can also add a tablespoon of soy
sauce for additional flavor if chosen.
10. To serve, place some ragged chicken in a bowl and ladle the hot broth over it. You can spit a little
sesame oil on top for extra flavor and garnish with more chopped green onions if you like.
